A great alternative to the leg, with extra fat the shoulder can offer a blend of flavour. Cooked slowly and allowed to tenderise, shoulder has every ounce of leg’s splendour. While shoulder makes a fantastic roast, it’s ideal for dicing or mincing too.

With the perfect fat content the shoulder is perfect for slow cooking and even smoking!
