Taken from our own flock of sheep that have matured on wild pastures and herbs, this is perfect for rich a slow cook or curry. The deep flavour of the meat reflects the pastures it has grazed. The meat is cut from the shoulder to ensure sufficient fat content that makes for tender meat every time.

The carcass is matured for 10 days before cutting to further intensify the flavour.
